This mini series was created to motivate and inspire the novice chef. Since I am employed by Trader Joes, I thought it would be fun to recreate recipes using only products from TJ's. In this episode, the third of seven, I make a Mediterranean falafel wrap. Enjoy!

Falafel Wrap

1 Box of Trader Joe's Falafel Mix
1 Persian Cucumber
1 Tomato
1/4 Red Onion
"Pastures of Eden” feta (desired quantity)
1 Tzatziki Creamy Garlic Cucumber Dip
Middle Eastern Flatbread
Vegetable Oil (4” deep in desired pot)

Blend 3/4 cup of water into 1 cup of dry falafel mix. Cover lightly and let sit for 30-60 mins. While falafel is setting up, chop cucumber, tomato and onion. Form the falafel mixture into 1 3/4" balls.

Pour 4 inches of oil into desired pot and heat on medium-high (300 degrees fahrenheit). Once hot, drop falafel balls into oil for 1-2 minutes or until they rise to the top. Let cool on a paper towel. An alternate option is to bake in the oven at 350 degrees fahrenheit for 25-30 mins.

Lightly spread tzatziki dip down the middle of flatbread. Place falafel on top of tzatziki. Top with cucumber, tomato and onion. Add more tzatziki and crumble feta cheese.
